autumnal banana, chocolate and raspberry bread

If you’re looking for a comforting and delicious treat this autumn then this is perfect for you!

This twist on a classic banana bread is sure to create curiousity and delight whether you’re making it for yourself or others.

Cooking time: 20 minutes prep, 45 minutes baking.


Ingredients:

  • 140g of soft butter (plus extra to grease tin)

  • 140g of caster sugar

  • 140g of self raising flour

  • 2 large eggs (beaten)

  • 1 tsp of baking powder

  • 3 very ripe bananas (mashed)

  • As many chocolate chips and raspberries your heart desires

  • Raspberry jam (optional)

  • Peanut Butter (optional)


Method:

  • Firstly preheat your oven to 180 degrees Celsius and grease your loaf tin with butter.

  • Then mix the butter and the sugar until light and fluffy.

  • Add the beaten eggs with a little of the flour.

  • Fold the rest of the flour into your batter.

  • Now chuck in your mashed up banana and baking powder and mix.

  • Add in your chocolate chips and raspberries then mix.

  • Pour your batter into your loaf tin and bake for roughly 45 minutes. Check the banana bread at 30 minutes by using a skewer and if still wet then check every 5 minutes until cooked through.

  • Take your banana bread out the oven and let cool in the tin for 15 minutes then take it out and place on a wire rack for another 15.

  • Finally you can decorate with a thin spread of peanut butter and some dollops of raspberry jam or just enjoy as is!

Top tip: Heat for a couple seconds in the microwave or toaster and add a touch of salted butter before eating for maximum deliciousness!
