autumnal banana, chocolate and raspberry bread
If you’re looking for a comforting and delicious treat this autumn then this is perfect for you!
This twist on a classic banana bread is sure to create curiousity and delight whether you’re making it for yourself or others.
Cooking time: 20 minutes prep, 45 minutes baking.
Ingredients:
140g of soft butter (plus extra to grease tin)
140g of caster sugar
140g of self raising flour
2 large eggs (beaten)
1 tsp of baking powder
3 very ripe bananas (mashed)
As many chocolate chips and raspberries your heart desires
Raspberry jam (optional)
Peanut Butter (optional)
Method:
Firstly preheat your oven to 180 degrees Celsius and grease your loaf tin with butter.
Then mix the butter and the sugar until light and fluffy.
Add the beaten eggs with a little of the flour.
Fold the rest of the flour into your batter.
Now chuck in your mashed up banana and baking powder and mix.
Add in your chocolate chips and raspberries then mix.
Pour your batter into your loaf tin and bake for roughly 45 minutes. Check the banana bread at 30 minutes by using a skewer and if still wet then check every 5 minutes until cooked through.
Take your banana bread out the oven and let cool in the tin for 15 minutes then take it out and place on a wire rack for another 15.
Finally you can decorate with a thin spread of peanut butter and some dollops of raspberry jam or just enjoy as is!

Top tip: Heat for a couple seconds in the microwave or toaster and add a touch of salted butter before eating for maximum deliciousness!
